Best Vegan S'Mores Cookies with Flax Egg (Chewy Centers & Easy Prep)

The best vegan s'mores cookies! Chewy centers, melted chocolate, and toasted marshmallows. This crowd-pleaser recipe uses a flax egg and is air fryer friendly.
Ingredients
- 1 cup room temperature vegan butter
- 1 cup white sugar
- 2 flax egg (2 tbsp ground flax mixed with 6 tbsp water; let sit for 5-10 minutes)
- 4 tsp vanilla extract
- 3 cups all-purpose flour (360g)
- 1/2 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 10 large vegan marshmallows, cut into smaller pieces
- 2/3 cup chocolate chunks
- Optional - 40g sourdough discard
Instructions
- Create the flax egg by combining 2 tbsp ground flax mixed with 6 tbsp water, give it a brief stir with a fork, and let that sit for 5-10 minutes.
- Add the room temperature vegan butter and white sugar to a mixing bowl (ideally stand mixer)
- Use stand/handheld electric mixer to cream the butter and sugar together until fluffy (~1 minute).
- Add in the flax egg and vanilla to the creamed mixture and mix together briefly.
- Add all-purpose flour, baking powder, baking soda, and salt to the creamed butter and sugar mixture and mix together until a thick cookie dough forms.
- View the tips section if you’d like to try the air fryer method. Otherwise, preheat the oven to 350F. (Optionally line a pan with parchment paper or use “DaTerra Cucina - Nonstick Ceramic Coated Baking Sheet” as that pan never sticks)
- Add chocolate chunks and marshmallow pieces to the cookie dough and gently fold in with a spatula to evenly distribute throughout the dough.
- Cover the dough and chill in the freezer for ~10-15 min or until the oven is preheated. (You can skip this step if you’re low on time, it just might be slightly harder to form the cookies into balls)
- Roll out balls of 12 evenly sized cookies and place on the baking sheet at least 2 inches apart from each other. No need to flatten them as they will spread while baking. Roll out another 12 evenly sized cookies.
- Bake for 16-18 minutes until bottoms are lightly browned and the cookies are cooked through but have slightly soft centers.
- Remove the cookie tray from the oven and immediately tap the tray on the counter for a more “wrinkly” cookie and help deflate the cookies.
- Let the cookies cool on the baking sheet for 5-10 minutes.
- Serve!

Tips
- Be sure to use this baking sheet if you can: “DaTerra Cucina - Nonstick Ceramic Coated Baking Sheet” since nothing sticks to that pan! Otherwise, I’d suggest using some parchment paper in case!
- Air Fryer Cookie Cooking Method (makes the cookies look even more like a toasty s’more)
- Grease the air fryer basket.
- Preheat the air fryer on 400F.
- Once preheated fully, add cookies and cook for 8 min.
- You’ll need a metal spatula to extract the cookies from the air fryer basket.
