Crispy air fryer Biscoff baklava egg rolls filled with sweet dates, cashews, warm cinnamon, and a hint of maple syrup, finished with a light lemon maple glaze.
Ingredients
These air fryer baklava egg rolls use naturally sweetened date and cashew filling blended with Biscoff spread and wrapped until golden and crispy.
- 6 plant-based egg roll wrappers (Nasoya)
- 6 Medjool dates (pitted)
- ⅔ cup raw cashews
- 2 tbsp cookie butter spread (Lotus Biscoff)
- 1 tbsp maple syrup (for the filling)
- Pinch of salt
- ½ tsp ground cinnamon
- 1 tbsp water (for the glaze)
- 1 tsp lemon juice (for the glaze)
- 1/4 C maple syrup (for the glaze)
Instructions
Make the filling
- Add the dates, cashews, Biscoff spread, 1 tbsp maple syrup, salt, and cinnamon to a food processor.
- Blend until mostly smooth but still slightly textured like traditional baklava filling. Scrape down sides as needed.
Roll the egg rolls
- Lay one egg roll wrapper flat in a diamond shape.
- Add 2–3 tablespoons of filling near the center.
- Fold the bottom corner over the filling, fold in the sides, and roll tightly upward.
- Lightly seal the edge with water.
- Repeat with remaining wrappers. It’s okay and preferable if you have some of the crumb left, since you can top the egg rolls with it!
Air fry
- No need to preheat, just throw in the 6 egg rolls into the air fryer basket and start cooking them on 400F.
- Cook on 400F for 3 minutes and 30 seconds, then flip the plant-based egg rolls to ensure even crispiness.
- Cook for 2 more minutes and then flip again.
- Continue cooking flipping each minute or so (~8 minutes total) until golden and crisp.
Make the glaze
- In a small saucepan, combine maple syrup, lemon juice, and water.
- Bring to a gentle simmer for 2–3 minutes until slightly thickened.
- Remove from heat.
Finish and serve
- Drizzle warm lemon maple glaze over the crispy egg rolls.
- Sprinkle on some of the reserved crumb from the filling.
- Let sit for a minute or two so the glaze lightly soaks in.
- Serve warm for best texture.
- Serving suggestion: These egg rolls are rich and indulgent, so one, maybe two, is plenty per person.
Tips
- Don’t overfill the wrappers or they may burst while air frying.
- Flip twice during cooking to ensure even crispiness.
- These are best enjoyed fresh but can be reheated in the air fryer for 2–3 minutes to re-crisp.
