Wow your friends with this creamy, zesty vegan elote! Grilled corn coated in dairy-free sour cream and mayo, then topped with bold Tajín and fresh lime.

Ingredients

  • Fresh ears of corn
  • Vegan mayonnaise
  • Vegan sour cream
  • Tajín seasoning
  • Lime juice
  • Fresh cilantro, chopped

Instructions

  • Boil the corn until fully cooked.
  • While the corn is boiling, mix a sauce using about 60% vegan mayonnaise and 40% vegan sour cream in a small bowl. Make enough to coat all the corn.
  • Roast the corn on the grill until slightly charred.
  • Once slightly cooled, spread a thin layer of the creamy sauce over each ear of corn.
  • Sprinkle with Tajín, a squeeze of lime juice, and chopped cilantro before serving.
