Wow your friends with this creamy, zesty vegan elote! Grilled corn coated in dairy-free sour cream and mayo, then topped with bold Tajín and fresh lime.
Ingredients
- Fresh ears of corn
- Vegan mayonnaise
- Vegan sour cream
- Tajín seasoning
- Lime juice
- Fresh cilantro, chopped
Instructions
- Boil the corn until fully cooked.
- While the corn is boiling, mix a sauce using about 60% vegan mayonnaise and 40% vegan sour cream in a small bowl. Make enough to coat all the corn.
- Roast the corn on the grill until slightly charred.
- Once slightly cooled, spread a thin layer of the creamy sauce over each ear of corn.
- Sprinkle with Tajín, a squeeze of lime juice, and chopped cilantro before serving.
