Craving comfort food? Make this quick vegan peanut butter ramen in under 15 minutes! Toss noodles in a savory Gochujang and lime sauce for a perfect weeknight meal.
Ingredients
- 3 tbsp peanut butter
- 2 tbsp soy sauce or tamari
- 1 ½ tbsp gochujang or sriracha
- 1 ½ tbsp sesame oil
- 1 tbsp lime juice
- 2 packs (3 oz each) vegan ramen noodles (no seasoning packets)
- 2 tbsp thinly sliced scallions (optional)
Instructions
- Bring a medium saucepan of water to a boil over medium-high heat.
- In a bowl, whisk together peanut butter, soy sauce, gochujang, sesame oil, and lime juice.
- Cook the ramen noodles for about 3 minutes, then drain, reserving 1 cup of the cooking water.
- Whisk ½ cup of the reserved hot water into the peanut butter sauce.
- Toss the noodles with the peanut butter sauce, adding additional water 1 tablespoon at a time until the desired consistency is reached.
- Top with scallions, if using, and serve.
